Christmas Cranberry Salsa

The other day I discovered a fantastic recipe for cranberry salsa, which I served at our Christmas dinner tonight. I found it on an Oklahoma City blog. The blogger (Carey Sue) is an etiquette expert. When she said this salsa had a kick, she wasn't kidding! I could eat this all day long, and it's so easy to make. I put it on my turkey, but it would be really great with chips or even by itself.

together and added the sugar. Doesn't it look Christmassy!?
I would be so lost without my Magic Bullet.
(Nobody asked me to say that.) (Ha!)

Christmas Cranberry Salsa
1 12oz package of Cranberries
1 bunch of Green Onions
2 fresh jalapenos, seeded (or not)
1 Tablespoon Olive Oil
1 bunch of Cilantro (give or take)
2 cups of Sugar (or Xylitol)
Lightly blend in food processor to desired consistency.
Refrigerate for a couple of hours. The longer it sits…the better it gets!
This is great as a garnish or by itself.

Whoa, I might have to try that. My wife is a cranberry fiend and I love hot food. Could be a win-win.

I watched my sister make this for Thanksgiving. Even though I can't stand cranberries I ate half the dish before she ever got it to the table.
