Cranberry Coffee Cake

I’ve been making this cranberry coffee cake recipe in the mornings before Robert and Juliette head out the door for work and school. It takes about 15 minutes to put it all together and requires only about 45 minutes of baking time.

About two years ago, all the stores in Oklahoma ran low on whole cranberries. I guess cranberry farmers didn’t have a good season. Now, I never take cranberries and the glorious bogs that make them possible for granted. In fact, when I grow up I want to work in a cranberry bog. It’s true! I was meant to ride a bicycle and live in Nantucket. Except in winter. =)

Here’s my fabulous Cranberry Coffee Cake. It’s perfect for the Christmas season!

2 cups of Baking Mix (Jiffy or Bisquick, etc.)
1 1/2 teaspoons cinnamon
2 tablespoons granulated sugar
Mix all of the above together

Add to it:
1 egg
2/3 of a cup of water or milk

1/2 cup cranberries chopped fine
1 whole orange cut in half and then quarters and nearly pureed. Use the entire orange, peel, pith, and all. I use my Magic Bullet to chop/puree both the cranberries and orange.

1/4 cup baking mix
1/2 cup brown sugar packed
1 teaspoon of cinnamon
1 1/2 cups whole cranberries

1/2 stick butter melted
Mix all of the above and spoon in clumps over the batter.

Cook for about 45 minutes at 350 degrees.

Enjoy!

Cranberry Dog

The kids and I made this the other night. It’s a can of cranberry sauce. We eat this stuff all year long, but never as often as we do during the holidays. Juliette can devour an entire can and even the Super Bridgy eats it! With her fingers!!

Sully and I were going for a Rudolph look, but this little fellow looks kind of sad. He looks more like a dog or an eel (ewww). It’s He’s resting on a bed of cranberry relish. To make it I Magic-Bullet a package of whole cranberries and one entire orange, peel and all. I mix together the two ingredients and add to it 1/2 cup of sugar. This is the best cranberry relish ever! We make it all throughout the season. Enjoy!

Finally, here’s a recipe I like for cranberry salsa (Christmas salsa) that includes cilantro. It’s almost as good as cranberry coffee cake. Almost.

    Ever tried making the coffee cake/relish without the pith from the orange? It essentially has no flavor other than bitter and is not digestible by humans. All of the flavor/essential oils of the fruit comes primarily from the zest of the rind (the outer few millimeters of the skin). If you got a zester (http://www.amazon.com/Oxo-Good-Grips-Lemon-Zester/dp/B00004OCJO) and used it to remove all of the zest of the orange, and then put that into your mix/relish and then peeled and pureed just the fruit and put that it, I wonder if it would up the ante on the flavor?

    Don’t be offended or anything haha… ask my Mom, I am love cooking so much and read/tape shows about it I nitpick her recipes ALL THE TIME! hahaha!

    That cake looks yummy. Problem is in my house with just my hubby and it, we would practically cut it in two and eat the whole thing in one sitting. We loved fresh baked breads, etc, but have NO will power!
