I seem to post a lot of pictures on Instagram of stuff I cook and bake, like this cranberry coffee cake. I also shared it on Facebook along with the recipe. Here it is in case you missed it. (By the way, I first shared this recipe on this blog back in 2009. My family loves it so much, when I opened the crisper the other day, I discovered my husband had brought home THREE bags of cranberries from the grocery store!)
Slightly Glorious.
Cranberry Coffee Cake
2 cups of Baking Mix (Jiffy or Bisquick, etc.)
1 1/2 teaspoons cinnamon
2 tablespoons granulated sugar
Mix all of the above together.
Add To It
1 egg
2/3 of a cup of water or milk
1/2 cup cranberries chopped fine
1 whole orange cut in half and then quarters and nearly pureed. Use the entire orange, peel, pith and all. I use my Magic Bullet to chop/puree both the cranberries and orange.
Mix!
Pour into a greased cake pan. (I use an 8×8 square, glass pan.)
Crumble Cranberry Topping
1/4 cup baking mix
1/2 cup brown sugar packed
1 teaspoon of cinnamon
1 1/2 cups whole cranberries
1/2 stick butter melted
Mix all of the above and spoon in clumps over the batter.
Cook for about 45 minutes at 350 degrees.
